Spicy BBQ Sausage Quesadilla

Tortillas topped with spicy sausage, thin slices of red onion, barbeque sauce, and Monterey Jack cheese. Filling topped with second tortilla sandwich style and browned in skillet on both sides to crisp tortillas and melt cheese. Quesadilla served with sour cream and salsa.

Ingredients -
1 Pound Hot Sausage
1/2 Cup Red Onion, thinly sliced
1/2 Cup BBQ Sauce
4 Flour Tortillas, (10 inch)
1 Cup Monterey Jack Cheese, shredded
Sour Cream
Salsa
 
Preparation:

1. Crumble and cook the sausage and onions in a skillet over medium heat until brown.

2. Stir in the BBQ sauce.

3. Place 2 of the tortillas on a flat surface.

4. Top each with 1/4 cup cheese.

5. Divide the sausage/onion mixture between the two.

6. Sprinkle each with 1/4 cup cheese.

7. Top with the last two tortillas.

8. Heat a large skillet over medium heat.

9. Add a small amount of vegetable oil to coat the bottom of skillet.

10. Cook one quesadilla at a time until golden brown on each side which takes about 2 to 3 minutes per side.

11. Cut into wedges and serve with sour cream and salsa.

 



Cooking Tip
Warning Tortillas in the Oven

Preheat the oven to 350 F. Stack a half dozen tortillas and wrap them tightly in aluminum foil. Place the tortillas in the preheated oven for about 15 minutes. Alternately you can place tortillas individually directly on  the oven rack at 400-450 for about 30 seconds.

Homemade Salsa

Simple salsas can be made at home with tomato, onion and chili pepper. Choose a tomato for its juiciness or lack of juiciness depending on the salsas use. White onion and yellow onion are pungent while yellow onion has a little sweetness to it. Red onion is much less pungent than white or yellow and a nice choice for mincing and eating raw. Jalapeno and serrano chili peppers can be used in salsa, the serrano being a good bit hotter than the jalapeno.
