Quesadilla Jalapeno Spread

Delicious spread for topping quesadillas prepared from mayonnaise, diced jalapenos, jalapeno juice, cumin, sugar, paprika, cayenne pepper, garlic powder, sea salt and fresh ground black pepper.

Ingredients -
1/4 Cup Mayonnaise
2 Teaspoons Canned Jalapeno Peppers, diced, drained, juice reserved
2 Teaspoons Reserved Jalapeno Juice
1/2 Teaspoon Ground Cumin
3/4 Teaspoon White Sugar
1/2 Teaspoon Paprika
1/8 Teaspoon Ground Cayenne Pepper
1/8 Teaspoon Garlic Powder
Sea Salt, to taste
Fresh Ground Black Pepper, to taste
 
Preparation:

1. Mix together the mayonnaise, diced jalapenos, jalapeno juice, cumin, sugar, paprika, cayenne pepper, and garlic powder in a food processor.

2. Blend until the mixture is smooth and the jalapeno is completely pureed which takes about 1 minute.

3. Season to taste with salt and pepper.

Storing Tortillas

You should store tortillas in a cool, dry location in an airtight container. Corn tortillas last longer than flour tortillas and are even useful as they slowly lose their moisture. Freezing flour tortillas works very well, but corn tortillas do not freeze well.

Whole Cumin Seeds

Whole cumin seeds are the best choice when choosing cumin spice. The seeds should be ground in a mortar just before use as the flavorful oil escapes rapidly after grinding. Toasting the cumin seeds before grinding enhances their warm flavor. Cumin is a strong spice and should be used sparingly.
