Mashed Potato Quesadilla

Nice after holiday breakfast or lunch treat. Mashed potatoes, crumbled bacon, and cheddar cheese highlight this quesadilla dish. Serve hot with salsa and sour cream.
Ingredients -
2 cups Mashed Potatoes
6 slices cooked Bacon, crumbled
1/4 cup sliced Green Onions
8 Flour Tortillas
2 cups shredded Cheddar Cheese
2 tablespoons softened Butter
1 cup Salsa
1/4 cup Sour Cream
 
Preparation:

1. Stir together the mashed potatoes, bacon, and green onions.

2. Spread the mashed potato mixture onto one side of half of the tortillas, spreading to within 1/2 inch of the edges.

3. Sprinkle the shredded cheese on top of the mashed potatoes and top with the remaining tortillas. Lightly butter each side of the quesadillas.

4. Preheat a large skillet over medium heat.

5. Place a quesadilla into the preheated pan, and cook until golden brown and crispy, then turn over, and continue cooking on the other side until browned, 2 to 3 minutes per side.

6. Repeat with remaining quesadillas.

7. Serve with salsa and sour cream.

Preparing Mushrooms

Wipe mushrooms with a damp paper towel, cut off the stubby end of the stem, and if the mushrooms are large, remove the stem from the cap.

There are dozens, if not hundreds of varieties of mushrooms. Most will be firm and shiny. The surface of the cap will be dry and not slimy, indicating freshness.
