Crispy Breakfast Quesadillas

Egg, bacon and cheddar cheese filled quesadilla.
Ingredients -
Non-Stick Cooking Spray
1 Flour Tortilla, (7 inch) 
1/2 Cup Pasteurized Refrigerated Egg Product, well shaken
2 Tablespoons Cheddar Cheese
1 Slice Ready to Serve Bacon, broken into 1/2-inch pieces
2 Tablespoons Grape Jelly
 
Preparation:

1. Spray a small skillet with non-stick cooking spray.

2. Place the skillet over medium heat and add the egg mixture.

3. Cook without stirring until the edges begin to set.

4. Gently turn the eggs in the skillet to scramble.

5. Cook until the eggs are set.

6. Heat a large skillet over medium heat.

7. Coat one side of tortilla with non stick cooking spray.

8. Place them in the pan sprayed side down.

9. Cover half of the tortilla with cheese, scrambled egg and bacon.

10. Cook until they are golden brown.

11. Remove the quesadilla to a serving plate.

12. Spread the jelly over other half of the tortilla.

13. Fold in half and serve warm.

Tortillas

Tortillas made from wheat are very flexible and used in making large burritos and enchiladas. Wheat tortillas are usually warmed to soften them before being filled and rolled.
