Chicken Fajita Quesadillas

Baked tortillas filled with diced chicken breast seasoned with fajita spice blend, sautéed vegetables mixture of red and green bell pepper and onion, shredded cheddar cheese, shredded Monterey Jack cheese and bacon pieces.

Ingredients -
1 Pound Skinless - Boneless Chicken Breast, diced
1 Packet Fajita Seasoning, (1.27 ounce)
1 Tablespoon Vegetable Oil
2 Green Bell Peppers, chopped
2 Red Bell Peppers, chopped
1 Yellow Onion, chopped
10 Flour Tortillas, (10 inch)  
1 Package Cheddar cheese, (8 ounce), shredded
1 Tablespoon Real Bacon Bits
1 Package Monterey Jack Cheese, (8 ounce), shredded
 
Preparation:

1. Preheat the broiler.

2. Spray a baking sheet with non-stick cooking spray.

3. Toss the chicken with the fajita seasoning.

4. Spread onto the baking sheet.

5. Place under the broiler and cook until the chicken pieces are no longer pink in the center and juices run clear which takes about 5 minutes.

6. Preheat the oven to 350 degrees.

7. Heat the vegetable oil in a large saucepan over medium heat.

8. Stir in the red bell peppers, green bell peppers, chicken and onion.

9. Cook and stir until the vegetables have softened which takes about 10 minutes.

10. Layer half of each tortilla with the mixture and sprinkle with the Cheddar cheese, Monterey Jack cheese and bacon bits.

11. Fold the tortillas in half and place onto a baking sheet sprayed with non stick cooking spray.

12. Bake the quesadillas in the preheated oven until the cheeses have melted which takes about 10 minutes.

Masa Harina

Masa harina is a powdered corn flour that is readily available and used to make corn tortillas.  The tortillas are prepared from the corn flour and cooked on a hot griddle.

Chicken Breast

Chicken breast is available fresh or frozen in a few different varieties including whole breasts, half breasts and chicken tenders. Boneless, skinless chicken breast makes the job much easier than removing the skin from the breast and the breast from the bone.
