Cheesy Spanish Rice Chicken Quesadillas

Quesadilla featuring rice, chicken tenders, olives, Mexican style cheese, salsa and sour cream.
Ingredients -
6 Chicken Tenders, cut into bite sized pieces
1-3/4 cups Water
1 box Spanish Rice
6 Flour Tortillas (8-inch)
1/4 cup Ripe Olives, sliced
1-1/4 cups Mexican-Style Cheese Blend, shredded
3/4 cup Medium Salsa
1/3 cup Sour Cream
 
Preparation:

1. Preheat oven to 450 F.

2. Cook rice according to package directions (add chicken to rice in the beginning of the rice cooking process).

3. Spray both sides of tortillas with non-stick cooking spray.

4. Place 3 tortillas on baking sheet.

5. Top tortillas with equal parts rice mixture and 1 cup cheese.

6. Top with remaining tortillas. Sprinkle with remaining ¼ cup cheese.

7. Bake 5 to 7 minutes until light brown. Cut into wedges and serve.

8. Garnish with salsa and sour cream.

Buy Fresh Chicken
Ideally, you want to buy only the freshest chicken breasts available. Always check the “use by” date on the package. When you open the package, smell the chicken to make sure it is free of any odor.

The chiffonade cut is used for cutting leafy vegetables and herbs into ribbon like strips. The same style of cutting can be used for cutting chicken.
