Cheesy Bean Quesadillas

Quesadilla featuring your favorite cheese, with picante sauce, green onions, and olives.
Ingredients -
1 Can Refried Beans (16 oz. size)
8 Flour Tortillas
1/2 Cup Shredded Cheddar Cheese
1/2 Cup Picante Sauce
3 Green Onions (sliced)
1/2 cup Black Olive Slices
 
Preparation:

1. Preheat grill for 5 minutes.

2. Brush with oil.

3. Spread beans on half of the tortillas.

4. Top each with cheese, picante sauce, green onions and olives.

5. Top with the remaining tortillas.

6. Place on the grill and close lid.

7. Grill for 4-5 minutes.

8. Remove from the grill and cut into wedges.

9. Serve with chopped tomatoes, shredded lettuce and a dollop of sour cream on the side.

Choosing Mushrooms
Generally, mushrooms of similar sizes and shapes are interchangeable, but different mushroom varieties do taste different so be forewarned.

Slice off the bottom and top of the onion, peel off the outer layer, and make slices from one end to the other.
