Brie And Mango Quesadillas

Brie with onion, poblano peppers, and mango. Tortilla sandwich is toasted until cheese melts, cut into wedges and served hot.
Ingredients -
1/2 cup thinly sliced White or Yellow Onion
1/2 cup Water
10 Flour Tortillas
1 Pound Brie Cheese, cut in 1/4-inch thick slices
2 Poblano Peppers, roasted and peeled
1 Ripe Mango, peeled and diced
1/4 cup Oil
 
Preparation:

1. Halve the onion slices.

2. Over high heat heat the water in a medium skillet.

3. Add the onion and remove from the heat.

4. Let the onion stand until the slices are wilted which takes approximately 12 minutes.

5. Drain and set aside.

6. Put a few strips of Brie on half of the flour tortilla.

7. Add a few onion strips, diced poblanos, and mango.

8. Fold the tortilla over and brush top with the oil.

9. Over medium heat and heat a skillet and brown the tortilla oiled side down.

10. Brush top side with oil While it is browning, flip and brown the other side.

11. Cut into 3 equal wedges and serve.

12. Repeat with remaining ingredients.
