Black Bean Quesadillas With Cilantro Sour Cream Sauce

Black beans, mozzarella and feta cheeses, and salsa between toasted brown tortillas. Cut into wedges and served with sour cream dip.
Ingredients -
1 cup Fat-Free Sour Cream
6 tablespoons Fresh chopped Cilantro
2 tablespoons Fresh Lime Juice
Cooking Spray
4 (8-inch) Whole Wheat Tortillas
1 (15 ounces) can Black Beans, drained, rinsed and divided
1/2 cup Low-Fat Mozzarella cheese, divided
2 ounces crumbled Feta Cheese, divided
1/2 cup Fresh Salsa, divided
 
Preparation:

1. In a small bowl, combine sour cream, chopped cilantro, and fresh lime juice. Set aside.

2. Spray skillet with non-stick cooking spray. Heat skillet over medium heat. Place tortilla in skillet. Top tortilla with ½ black beans, ½ the mozzarella and feta cheeses, and ¼ cup salsa.

3. Top with second tortilla.

4. Heat until brown on bottom. Turn with spatula and cook until browned on the other side.

5. Repeat with remaining 2 tortillas.

6. Cut each quesadilla into 4 pieces and serve with sour cream mixture.
