Beef Pepper Quesadillas

Cube steak strips with bell pepper, onion, and jack cheese. Seasoned and cooked between toasted tortillas. Makes perfect dinner entree.
Ingredients -
1 Beef Round Cube Steak (about 6 ounces), cut in thin strips
1 Medium-Size Onion, cut in thin wedges
1 Medium-Size Sweet Green Pepper, cut in strips
1 teaspoon Ground Cumin
1/4 teaspoon Salt
1/2 cup shredded Jack Cheese (2 ounces)
8 large Flour Tortillas (10-inch)
1 Medium-Size Tomato, coarsely chopped
1/2 cup bottled Salsa
Sour Cream
 
Preparation:

1. Heat oven to 425 F.

2. Coat large nonstick skillet with cooking spray.

3. Heat over medium heat.

4. Add cube steak, onion wedges, green pepper strips, and ground cumin to skillet.

5. Stir constantly for 6 minutes or until meat browns and vegetables are crisp tender.

6. Sprinkle mixture with salt.

7. Remove skillet from heat.

8. Sprinkle each tortilla with cheese. Top cheese with steak mixture.

9. Place remaining tortillas on top

10. Coat a large baking sheet with cooking spray.

11. Place tortillas on prepared sheet.

12. Bake 8 minutes or until lightly browned.

13. Cut quesadillas into wedges.

14. In a small bowl, combine tomato and salsa. Serve with sour cream as garnish.
