Baked Ham And Cheese Quesadillas

Great quesadilla dish for using up christmas or easter ham. Ham with tomatoes, cheese, and green onion pressed between tortillas, and cooked until tortillas are lightly browned and cheese has melted.
Ingredients -
4 Large Flour Tortillas
1/2 cup Monterey Jack Cheese, shredded
Thinly Sliced Ham
1/2 cup Tomatoes, diced
2 tablespoons Chives, chopped
Pepper, to Taste
Vegetable Oil for Brushing Tops
 
Preparation:

1. Lightly spray a cookie sheet with vegetable cooking spray.

2. Arrange 2 tortillas on the cookie sheet.

3. Evenly top the tortillas with 1/4 cup of the cheese.

4. Top the cheese with the sliced ham or turkey the diced tomatoes, chives, then the other 1/4 cup of cheese.

5. Sprinkle each with a little pepper then cover each with another tortilla.

6. Brush the tops with vegetable oil and bake at 425 for approximately 10-12 minutes or until browned.

7. Cut the quesadillas into wedge.

8. Serve with mustard or mayonnaise.

Ripe Tomatoes
It is best to use ripe tomatoes within a few days. Refrigerate tomatoes that are beginning to lose their freshness and use them in recipes where they will be cooked.

Chives

Chives have a lively biting flavor, similar to onion. If you need to substitute for the chives, use green onions (scallions).
