Avocado Quesadillas

Avocado, green onions, jack cheese, and jalapeno peppers between tortillas. Quesadilla is lightly browned, cut into wedges and served with sour cream and salsa.
Ingredients -
4 Flour Tortillas
1 Avocado
2 Scallions, chopped
1/2 cup shredded Monterey Jack Cheese
1 Jalapeño Pepper, seeded and coarsely chopped
2 cups Prepared Salsa
1 cup Sour Cream
 
Preparation:

1. Prepare a bed of coals or preheat the gas grill.

2. Remove the avocado from the skin, mash and spread over two of the tortillas.

3. Sprinkle the scallions, jack cheese and jalapeño over the avocado.

4. Cover each with a tortilla.

5. Place on the grill and cook for two minutes.

6. Carefully turn and cook for two more minutes.

7. Cut each quesadilla into 6 pieces.

Place un-ripened tomatoes in a brown paper bag and store at room temperature until they’re deep red.

Cilantro

Cilantro has a musty lemon flavor, and is best when chopped fresh. There really is not another herb that tastes like cilantro, and thus no real good substitute.
